In another container, mix the ricotta with the honey with a spatula, then add the whipped cream gently and mix it in perfectly. Put the orange juice in a low and wide container and turn the ladyfingers on both sides quite quickly: they must be soaked but not soft. Stone the cherries and cut them in half. Start composing the tiramisu: put on the bottom of each portion a little ricotta cream and a few flakes of chopped dark chocolate with a knife. Place a layer of ladyfingers soaked in orange juice on top and spread them with generous ricotta cream. Then lay some pitted cherries and garnish with pieces of chocolate. Place two layers and sprinkle on the surface with bitter cocoa and decorate with whole cherries. Refrigerate 2 hours before serving.
